Poached Sweet & Sour Spiced Beets

Serves 6

Ingredients

  • 1 lb Fresh red beets, approximately 3 medium to large sized beets
  • 2 cups Fresh squeezed orange juice
  • 1 cup White balsamic vinegar
  • 1 cup Water
  • 1/2 cup Granulated sugar
  • 2 tsp Kosher salt
  • 1 tbsp Whole black peppercorns
  • 3 Bay leaves
  • 1 tsp Whole allspice, approximately 4 to 6

Instructions

  1. Add all ingredients to a medium pot and bring to a low boil. Turn heat down to low, cover and keep at a low simmer.
  2. If beets are not fully submerged in liquid while cooking, flip every 5 to 10 minutes to ensure even flavor and cooking time.
  3. Simmer for 45 to 60 minutes or until beets are just tender in the center when poked with a toothpick. Turn off heat.
  4. Continue to poach beets (off the heat) until they're even more tender when poked with a toothpick, approximately 10 to 20 minutes.
  5. Remove beets from pot (reserve liquid) and use a paper towel to gently wipe off and discard skins. Slice beets into thin rounds or wedges and place into a storage container. A few pint or quart canning jars with lids work great for this.
  6. Once poaching liquid is cool enough, strain through a fine mesh sieve into a bowl, discarding all solids.
  7. Pour poaching liquid over beets to just cover. Add lids and chill at least 30 minutes to allow beets to cool and flavors to set up. Overnight is recommended.
  8. Serve as a snack or use on salads for extra color, flavor and texture. Season to taste as needed.
  9. Chef's Note: Total cooking time varies based on size of beets. Leftover poaching liquid can be used to make salad dressing. Beets in poaching liquid will keep for about 7 days in the fridge.
