  • 24 oz Marinara pasta sauce
  • 1 cup Kale, finely chopped
  • 1 1/2 cups Head of cauliflower, diced
  • 2 cups Fat free mozzarella cheese, shredded, divided use

Instructions

  1. Preheat oven to 400°F.
  2. Cook lasagna noodles according to package directions; drain and set aside.
  3. Meanwhile, cook beef over medium heat in large skillet until no longer pink.
  4. Stir in marinara sauce, kale and cauliflower; heat through.
  5. Place noodles on wax paper.
  6. Spread 1/3 cup sauce mixture and 2 Tablespoons cheese over each noodle; roll up tightly and place each noodle seam side down in an ungreased 13 x 9 inch baking dish.
  7. Top roll-ups with remaining sauce and remaining cup of cheese.
  8. Bake uncovered approximately 15 minutes, or until heated through.
