Pinwheel Lasagna Noodles

Ingredients
- 8 Whole wheat lasagna noodles
- 1 lb 85% lean ground beef
- 24 oz Marinara pasta sauce
- 1 cup Kale, finely chopped
- 1 1/2 cups Head of cauliflower, diced
- 2 cups Fat free mozzarella cheese, shredded, divided use
Instructions
- Preheat oven to 400°F.
- Cook lasagna noodles according to package directions; drain and set aside.
- Meanwhile, cook beef over medium heat in large skillet until no longer pink.
- Stir in marinara sauce, kale and cauliflower; heat through.
- Place noodles on wax paper.
- Spread 1/3 cup sauce mixture and 2 Tablespoons cheese over each noodle; roll up tightly and place each noodle seam side down in an ungreased 13 x 9 inch baking dish.
- Top roll-ups with remaining sauce and remaining cup of cheese.
- Bake uncovered approximately 15 minutes, or until heated through.
