Pineapple Upside Down French Toast

Ingredients
- 8 fl oz H‑E‑B Select Ingredients Half & Half
- 1 tbsp Granulated Sugar
- 3 Large Eggs
- 1 tsp Vanilla extract
- 4 slices Brioche
- 4 slices No Sugar Added Pineapple Slices, drained, divided use
- 4 tbsp Brown sugar, divided use
Instructions
- In a medium bowl, whisk half and half, sugar, eggs, and vanilla until combined.
- Heat a medium skillet over medium heat. Dip bread in egg mixture, soak for about 15 seconds then flip and soak for another 15 seconds. The bread should absorb some liquid but will not be soggy.
- Transfer soaked brioche to preheated skillet and cook for 4 to 5 minutes. While it cooks, place a pineapple ring in center of bread and sprinkle 1 tablespoon of brown sugar over pineapple.
- When bread has toasted, carefully flip and cook an additional 4 to 5 minutes until sugar is caramelized and center of toast is completely cooked. Set toast aside on a serving plate and repeat with remaining bread slices.
