Pineapple Rice

Unsaved Pineapple Rice

Ingredients

  • 1 tbsp Unsalted butter
  • 1 Garlic cloves, finely chopped
  • 14.5 oz Reduced sodium chicken broth
  • 8 oz Crushed pineapple, undrained
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper
  • 1 1/4 cups Long grain rice

Instructions

  1. Melt butter in a 2 quart saucepan over medium-high heat.
  2. Saute garlic for 1 minute.
  3. Add broth, pineapple with juice, salt and pepper.
  4. Stir and bring to a boil.
  5. Add rice and cover tightly.
  6. Reduce heat to low and simmer 20 minutes or until liquid is absorbed.
  7. Fluff with a fork and serve.
