Instructions

  1. Bring coconut milk, broth and pineapple to a boil in a 2 quart saucepan over medium-high heat.
  2. Reduce heat to low and stir in rice.
  3. Cover pan with a tight fitting lid and simmer for 15 minutes or until rice is tender.
  4. Fluff with a fork and stir in cilantro and bell pepper. Season with red pepper flakes. Cover and keep warm until ready to serve.
