Pikes Peak Barbecued Lamb

Serves 2

Ingredients

  • 2 tsp Extra virgin olive oil
  • 1/4 cup White onion, minced
  • 1/4 cup Green bell pepper, minced
  • 3/4 cup Chili sauce
  • 1/4 cup Orange juice
  • 2 tbsp Brown sugar, packed
  • 2 tsp Large navel orange, grated
  • 1 tsp Original flavor Tabasco
  • 2 Bone-in leg of lamb steak

Instructions

  1. In small pan, heat olive oil.
  2. Sauté minced onion and minced green pepper for 2 to 3 minutes, stirring occasionally.
  3. Blend in chili sauce, orange juice, brown sugar, orange peel and Tabasco Sauce.
  4. Cover and simmer for 10 minutes.
  5. Brush steaks with sauce and place over medium-high grill.
  6. Cook 5 minutes, turn and brush with sauce.
  7. Cook an additional 5 minutes, turn and brush with sauce.
  8. Remove from grill and cut steaks into thirds and serve.
