Pickled Red Onions

Unsaved Pickled Red Onions

Ingredients

  • 2 Bay leaf
  • 1 tbsp Granulated sugar
  • 1 1/2 tbsp Kosher salt
  • 1 Small Lime, peel only
  • 1 Large Red onion, sliced very thin (a mandolin works best)
  • 1 cup Red wine vinegar
  • 1 cup Water
  • 1 tbsp Whole black peppercorns

Instructions

  1. In a small stainless steel pot, add red wine vinegar, water, salt, sugar, peppercorns, bay leaves and lime peelings. Bring to a simmer then remove from heat.
  2. Place onions in a container with a tight fitting lid and pour brine over onions. Cover and refrigerate for at least an hour.
  3. Strain liquid into a bowl, removing all solids. Allow to sit 10 minutes.
  4. Use for garnish on everything from BBQ to burgers or even eggs.
