Pickled Red Onions

Ingredients
- 2 Bay leaf
- 1 tbsp Granulated sugar
- 1 1/2 tbsp Kosher salt
- 1 Small Lime, peel only
- 1 Large Red onion, sliced very thin (a mandolin works best)
- 1 cup Red wine vinegar
- 1 cup Water
- 1 tbsp Whole black peppercorns
Instructions
- In a small stainless steel pot, add red wine vinegar, water, salt, sugar, peppercorns, bay leaves and lime peelings. Bring to a simmer then remove from heat.
- Place onions in a container with a tight fitting lid and pour brine over onions. Cover and refrigerate for at least an hour.
- Strain liquid into a bowl, removing all solids. Allow to sit 10 minutes.
- Use for garnish on everything from BBQ to burgers or even eggs.
