Philly Cheesesteak Stuffed Portobello Mushrooms

Unsaved Philly Cheesesteak Stuffed Portobello Mushrooms

Ingredients

  • 4 Large portobello mushrooms
  • 1 tbsp Olive oil, divided use
  • 7 oz Chopped onion and bell pepper blend
  • 3/4 lb Sirloin, sliced very thinly
  • 10 oz Alfredo sauce
  • 2 slices Provolone cheese, or about 1.5 oz. sliced into thin strips

Instructions

  1. Preheat oven to 375ºF. Line a baking sheet with foil. Heat a large skillet over medium-high heat.
  2. Gently clean smooth surface of mushrooms with a damp paper towel. Using an apple corer or spoon, remove the inner gills on the bottom side. Place mushrooms bottom-side up in a single layer on prepared baking sheet.
  3. Add half of oil to hot skillet along with onion/bell pepper mixture. Cook and stir for 2 to 3 minutes until bell pepper starts to soften.
  4. Push onions to the side of the pan and add remaining oil and sirloin to hot pan. Cook for 2 to 3 minutes, or just long enough to sear beef but not cook all the way through.
  5. Turn heat off and pour sauce over top of meat. Stir to combine and season to taste with salt and pepper. Spoon mixture carefully into prepared mushroom caps and top with cheese. Cook in oven for 10 minutes, or just until cheese melts.
