Persimmon Cookies

Ingredients
- 3 Fresh persimmons, thoroughly washed, tops trimmed and persimmons diced
- 4 oz Unsalted butter, 1 stick, softened at room temp
- 1/4 cup Vegetable shortening
- 1 cup Organic pure cane sugar
- 1/4 cup Light brown sugar
- 1 Large brown egg
- 2 cups Unbleached all purpose flour, sifted
- 2 tsp Vanilla extract
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- 1 tsp Sea salt
- 1/4 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
Instructions
- In a stand mixer fitted with a paddle attachment, add all ingredients and mix on low speed for about 1 minute until everything is just incorporated.
- Preheat oven to 350ºF. Line a sheet pan with parchment paper and set aside. Additional pans may be needed.
- Scraping down sides of bowl as needed, turn mixer to medium-high speed, mix for 2 minutes then turn mixer off.
- Using approximately a 2 to 3-ounce scoop, scoop batter onto prepared sheet pan.
- Bake for 15 to 20 minutes or until cookies are a light golden brown and have puffed up. Remove cookies to a cooling rack to cool before serving.
- Store cookies in a zip-top bag or cookie jar for up to 3 days.
