Persimmon Cookies

Ingredients

  • 3 Fresh persimmons, thoroughly washed, tops trimmed and persimmons diced
  • 4 oz Unsalted butter, 1 stick, softened at room temp
  • 1/4 cup Vegetable shortening
  • 1 cup Organic pure cane sugar
  • 1/4 cup Light brown sugar
  • 1 Large brown egg
  • 2 cups Unbleached all purpose flour, sifted
  • 2 tsp Vanilla extract
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Sea salt
  • 1/4 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg

Instructions

  1. In a stand mixer fitted with a paddle attachment, add all ingredients and mix on low speed for about 1 minute until everything is just incorporated.
  2. Preheat oven to 350ºF. Line a sheet pan with parchment paper and set aside. Additional pans may be needed.
  3. Scraping down sides of bowl as needed, turn mixer to medium-high speed, mix for 2 minutes then turn mixer off.
  4. Using approximately a 2 to 3-ounce scoop, scoop batter onto prepared sheet pan.
  5. Bake for 15 to 20 minutes or until cookies are a light golden brown and have puffed up. Remove cookies to a cooling rack to cool before serving.
  6. Store cookies in a zip-top bag or cookie jar for up to 3 days.
