Penne Con Pico de Gallo

Ingredients
- 16 oz Penne pasta
- 12 oz Mild pico de gallo
- 11 oz Canned southwest corn, drained
- 2 tbsp Limes, juiced
- 6 oz Shredded Parmesan Cheese, shredded
- 1/4 cup Extra Virgin Olive Oil
Instructions
- Prepare pasta according to package directions. Drain, rinse and set aside.
- While pasta is cooking, combine pico de gallo, corn, lime juice, cheese and oil in a large pasta bowl.
- Add pasta to pico de gallo mixture and toss to combine.
- Cover with plastic wrap and chill for 15 minutes or until ready to serve.
