Unsaved Pear Salad with Blue Cheese and Bacon

Ingredients

  • 1/4 cup Apple cider vinegar
  • 1/4 cup Shallots, minced
  • 1 tbsp Dijon mustard
  • 2 tsp Honey
  • 1 cup Almond oil or any neutral oil
  • 9 oz Organic spring mix
  • 2 Bosc pears, stem removed, cut in half, cored and sliced, approximately 2 cups
  • 4 oz Blue cheese crumbles, as needed
  • 1 cup Celery, sliced thinly on a bias, plus more as needed
  • 2.5 oz Bacon bits, or as needed
  • 1/2 cup Chopped walnut pieces, lightly toasted

Instructions

  1. To make vinaigrette, combine apple cider vinegar, shallots, Dijon mustard, and honey in a blender and blend on high. With blender running, slowly add oil until an emulsion forms.
  2. Season to taste and refrigerate until ready to use.
  3. To assemble salad, place a handful of mixed greens on each plate and add slices of pear around the greens. Garnish with blue cheese, celery, bacon bits and walnuts.
  4. Drizzle dressing over each salad as desired and season to taste with salt and fresh cracked pepper.
  5. Refrigerate leftover salad dressing for up to 5 days.
