Pear Salad with Blue Cheese and Bacon

Ingredients
- 1/4 cup Apple cider vinegar
- 1/4 cup Shallots, minced
- 1 tbsp Dijon mustard
- 2 tsp Honey
- 1 cup Almond oil or any neutral oil
- 9 oz Organic spring mix
- 2 Bosc pears, stem removed, cut in half, cored and sliced, approximately 2 cups
- 4 oz Blue cheese crumbles, as needed
- 1 cup Celery, sliced thinly on a bias, plus more as needed
- 2.5 oz Bacon bits, or as needed
- 1/2 cup Chopped walnut pieces, lightly toasted
Instructions
- To make vinaigrette, combine apple cider vinegar, shallots, Dijon mustard, and honey in a blender and blend on high. With blender running, slowly add oil until an emulsion forms.
- Season to taste and refrigerate until ready to use.
- To assemble salad, place a handful of mixed greens on each plate and add slices of pear around the greens. Garnish with blue cheese, celery, bacon bits and walnuts.
- Drizzle dressing over each salad as desired and season to taste with salt and fresh cracked pepper.
- Refrigerate leftover salad dressing for up to 5 days.
