Pear Bacon and Blue Cheese Guacamole

Ingredients

  • 2 Large jumbo Hass avocado, cut in half, pit removed, and pulp diced
  • 1/2 cup Crumbled blue cheese
  • 1/2 cup Crumbled bacon bits
  • 1 cup Concorde pear, diced small or minced
  • 1/3 cup Fresh cilantro, minced or chopped fine
  • 1/4 cup Fresh lime juice
  • 2 tsp Fresh garlic, minced or zested, plus more to taste as needed
  • 1/4 cup Shallots, minced fine
  • 1/4 cup Fresh jalapeño, minced fine

Instructions

  1. Place all ingredients in a bowl and mix until combined and creamy.
  2. Season to taste, cover and refrigerate for at least 30 minutes to allow flavors to set up.
  3. Chef's Note: Serve over grilled chicken, as avocado toast, or with tortilla chips.
