Pear and Granola Muffins

Unsaved Pear and Granola Muffins

Ingredients

  • 3 cups All purpose flour
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1 cup Buttermilk
  • 1/4 cup Whole milk
  • 3 Large eggs
  • 8 oz Unsalted butter, melted
  • 1/2 cup Sour cream
  • 2 tbsp Canola or grapeseed oil
  • 1 1/4 cups Granulated sugar
  • 1 1/2 tsp Fine sea salt
  • 1 tbsp Vanilla extract
  • 2 cups Bosc pears, approximately 2 pears, stem and core removed and pear grated or chopped finely
  • 1 cup Granola cereal, plus more as needed for garnish

Instructions

  1. Preheat oven to 350ºF. Line muffin tins with baking cups and set aside.
  2. In a large bowl combine flour, baking powder, and baking soda and whisk to combine.
  3. In a blender combine buttermilk, milk, eggs, melted butter, sour cream, oil, sugar, salt and vanilla extract. Blend until smooth.
  4. Add blended wet mix to dry mix along with grated pears, and mix until batter is smooth.
  5. Scoop batter into each cup until 3/4 full. Sprinkle approximately 1 to 2 tablespoons of granola over the top of each muffin for garnish.
  6. Bake for 30 to 35 minutes or until muffins are set in the center and a toothpick pulls out clean when inserted.
  7. Repeat with additional muffin batter as needed. Allow to cool completely before serving.
  8. Chef's Note: To intensify pear flavor, roast pears before baking until nicely browned then complete recipe as described.
