Party Bruschetta

Ingredients

  • 4 Roma tomatoes, chopped
  • 2 tbsp Chopped red onion
  • 4 Garlic clove, chopped
  • 1/4 cup Fresh basil, chopped
  • 1/3 cup Extra virgin olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Kosher salt
  • 1 Fresh baguette bread

Instructions

  1. Heat oven to 450 degrees °F.
  2. Line a baking sheet with foil and spray with nonstick cooking spray; set aside.
  3. In a large bowl, combine tomatoes, onion, 2 teaspoons of chopped garlic, 2 tablespoons chopped basil, 2 tablespoons olive oil, red wine vinegar, and salt; toss to coat ingredients.
  4. Cover the bowl with plastic wrap and refrigerate for 30 minutes or more.
  5. Combine remaining garlic, basil, and olive oil in a small bowl and set aside.
  6. Cut the bread into 1/4-inch slices and place on prepared baking sheet.
  7. Brush bread with the oil mixture and save remaining oil mixture.
  8. Bake on center oven rack for 5 minutes.
  9. Remove from oven and turn bread slices over and brush with remaining oil mixture and bake for 5 more minutes.
  10. Spoon 1 tablespoon of the chilled tomato mixture on top of each slice of bruschetta and serve.
