Instructions

  1. Preheat oven to 375ºF.
  2. In a small sauté pan over medium high heat, add olive oil, onions, garlic and pancetta. Stir-fry until pancetta starts to get crispy, keeping everything moving in the pan so garlic doesn't burn. Remove from heat and set aside.
  3. Whisk eggs, cream and arugula together and season with a pinch of salt and pepper.
  4. Evenly spread bread cubes in a casserole dish and pour egg and cream mixture over the top. Stir pancetta mixture evenly throughout then cover with Parmesan cheese.
  5. Bake 30 to 45 minutes or until custard is slightly brown and set in the middle. Allow to cool before cutting and slicing. Season to taste as needed.
