Unsaved Pan Seared Chicken Thighs with Mole Poblano

Ingredients

  • 1 tbsp Canola oil
  • 1 lb Bone In Natural Chicken Thighs, about 4 each
  • 17 oz Mole Poblano

Instructions

  1. Season chicken thighs to taste with salt and pepper then arrange skin-side down in the skillet.
  2. Sear chicken for 5 to 6 minutes, then flip and continue to cook for an additional 5 to 6 minutes. Adjust heat as necessary.
  3. Pour mole sauce directly into the skillet, bring to a simmer, then reduce heat to medium. Cover and cook for 5 minutes until chicken reaches an internal temperature of 165ºF.
  4. Serve chicken thigh whole with rice, or shred and use for taco filling.
  5. Chef's Note: For a thinner sauce, add 1/4 cup of chicken broth or water to the pan as it simmers.
