Pan Roasted Salmon with Tzatziki

Serves 4
Ingredients
- 3/4 cup Plain Greek yogurt
- 3 tbsp Fresh dill, minced
- 1/4 cup Fresh mint, chopped fine
- 2 tbsp Fresh lemon juice
- 2 Peeled garlic cloves
- 1/2 cup Cucumber, grated or minced, skin on
- 1 lb Fresh Atlantic salmon, 4 fillets, approximately 4 oz. each
- 1 tbsp Extra virgin olive oil
Instructions
- To make tzatziki, combine yogurt, dill, mint, lemon juice, and garlic in a food processor.
- Pour into a bowl and fold in cucumbers. Season to taste and set aside or refrigerate for later use.
- Place a large non-stick skillet over medium heat and allow to get hot.
- Season salmon fillets with salt and pepper and set aside while pan is preheating.
- Add oil to pan, swirl to coat, and place salmon fillets in pan skin-side up, flesh-side down.
- Cook for 5 to 6 minutes to allow a nice crust to form before flipping.
- Flip salmon and continue to cook skin-side down until salmon reaches an internal temperature of at least 150ºF. Serve with Tzatziki as desired.
- Chef's Note: Refrigerate any leftover tzatziki for up to 5 days.
