Pan Roasted Salmon with Tzatziki

Serves 4

Ingredients

  • 3/4 cup Plain Greek yogurt
  • 3 tbsp Fresh dill, minced
  • 1/4 cup Fresh mint, chopped fine
  • 2 tbsp Fresh lemon juice
  • 2 Peeled garlic cloves
  • 1/2 cup Cucumber, grated or minced, skin on
  • 1 lb Fresh Atlantic salmon, 4 fillets, approximately 4 oz. each
  • 1 tbsp Extra virgin olive oil

Instructions

  1. To make tzatziki, combine yogurt, dill, mint, lemon juice, and garlic in a food processor.
  2. Pour into a bowl and fold in cucumbers. Season to taste and set aside or refrigerate for later use.
  3. Place a large non-stick skillet over medium heat and allow to get hot.
  4. Season salmon fillets with salt and pepper and set aside while pan is preheating.
  5. Add oil to pan, swirl to coat, and place salmon fillets in pan skin-side up, flesh-side down.
  6. Cook for 5 to 6 minutes to allow a nice crust to form before flipping.
  7. Flip salmon and continue to cook skin-side down until salmon reaches an internal temperature of at least 150ºF. Serve with Tzatziki as desired.
  8. Chef's Note: Refrigerate any leftover tzatziki for up to 5 days.
