Pan Roasted Potatoes with Everything Bagel Butter

Serves 4

Ingredients

  • 4 oz Unsalted Butter, softened at room temperature
  • 1 tbsp Bagel Not Included Spice Blend, plus more as needed
  • 3 tbsp Grapeseed oil, plus more as needed for sautéing
  • 16 oz Frozen baby whole potatoes, thawed but still cold, cut in half
  • 1 tbsp Fresh chives, diced small

Instructions

  1. In a bowl, combine butter with bagel spice blend and mix well.
  2. Lay out a sheet of plastic wrap and place butter mixture on top. Roll up tightly so butter is in a small cylinder shape. Twist ends to seal and freeze for 10 minutes to solidify.
  3. Meanwhile, add oil to a large non-stick pan over medium heat. Place potatoes cut-side down in hot oil and cook 5 to 7 minutes or until very crispy.
  4. Flip potatoes, add approximately 2 tablespoons of prepared butter and continue to cook until potatoes are crispy on both sides.
  5. Transfer to a serving bowl, garnish with chives and season with more bagel seasoning if needed.
  6. Chef's Note: Rewrap leftover butter and freeze for up to a month. Use on anything from vegetables to sautéing chicken.
