Pan Roasted Mushrooms with Sherry and Herbs

Serves 4
Ingredients
- 1/4 cup Extra virgin olive oil
- 3 tbsp Unsalted butter, cut into pads
- 2 Fresh Rosemary, 1 to 2 whole sprigs
- 6 Thyme, sprigs
- 2 tsp Fresh garlic clove, minced or zested
- 16 oz Whole baby bella mushrooms, quartered or halved
- 1 tbsp Sherry vinegar
Instructions
- Add oil and butter to a large cast iron skillet or sauté pan over medium-high heat.
- Once butter is melted, add whole herbs and stir-fry for 1 to 2 minutes.
- Add garlic, mushrooms and a big pinch of black pepper (don't add any salt yet). Stir-fry for 8 to 10 minutes or until mushrooms have softened.
- Add sherry vinegar and a liberal pinch of salt, turn heat up to medium-high and stir-fry until liquid has almost evaporated.
- Remove from heat and discard cooked herb stems. Season to taste and garnish with fresh chives for added color, if desired.
