Unsaved Pan Fried Turkey Schnitzel

Ingredients

  • 1 1/2 cups Hill Country Fair All Purpose Flour
  • 5 H-E-B Grade AA Cage Free Large Brown Eggs, beaten
  • 2 cups H-E-B Japanese Style Panko Plain Bread Crumbs
  • 1 1/4 lb Thin sliced turkey cutlets
  • 1/16 tsp H-E-B Kosher Salt
  • 1/2 tsp H-E-B Pure Ground Black Pepper
  • 1/4 cup H-E-B Select Ingredients Grapeseed Oil
  • 1/4 cup Lemon(s), juiced
  • 1/4 cup H-E-B Non Pareil Capers, drained

Instructions

  1. Set up 3 bowls for a breading station with flour in one, beaten eggs in the second, and panko bread crumbs in the third.
  2. Season turkey with salt and pepper. Dredge each piece in flour (shake off excess) then egg and panko bread crumbs. Set on a sheet pan while repeating the process until all the turkey has been breaded.
  3. Place a sauté pan on medium heat, add oil and heat until hot. Sear breaded turkey in batches for about 2-3 minutes per side or until breading is golden brown and crispy. Repeat until all the turkey is cooked.
  4. Remove turkey from pan, and place over low heat. Deglaze pan with lemon juice and add capers, sauté for 2 minutes just to release all the brown bits leftover from the turkey. Turn off heat and pour the hot sauce over turkey cutlets. Season to taste.
