Oven-Roasted Herbs de Provence Pork Loin

Ingredients

  • 1 tsp Kosher salt
  • 4 Garlic cloves
  • 1 tsp Ground black pepper
  • 2 tbsp Herb de Provence spice blend
  • 2 lb Pork tenderloin
  • 1/4 cup Extra virgin olive oil

Instructions

  1. Heat oven to 375°F.
  2. Line a roasting pan with foil and set aside.
  3. Combine olive oil, garlic, herbes de Provence, salt and pepper in a pie dish.
  4. Roll the pork loin in the olive oil mixture and place in roasting pan.
  5. Roast on center oven rack for 30-45 minutes or until internal temperature reads 150°F and juices run clear.
  6. Remove from oven, cover with foil and let stand 15 minutes before slicing.
