Unsaved Oven Fried Herbed Fish and Chips

Ingredients

  • 2 lb Atlantic cod, cut diagonally into 2 inch thick pieces
  • 1/2 cup All purpose flour, or as needed for dredging only
  • 3 Large eggs, or as needed for coating fish
  • 1 cup Kettle cooked original potato chips, crushed into fine crumbs for measuring
  • 2 tbsp Zesty Romano herb spice blend

Instructions

  1. Preheat oven to 375ºF. Line a rimmed baking sheet with foil and set aside.
  2. Gently rinse fish under cool water and pat dry with paper towels. Set aside.
  3. Set up a breading station with 3 shallow bowls. Add flour to the first, beat eggs in the second, and mix crushed potato chips and seasoning in the third.
  4. Thoroughly coat fish with flour, then egg, then seasoned crumbs. Arrange in a single layer on prepared baking sheet.
  5. Bake for 15 to 18 minutes, or until fish is cooked to a golden brown on the outside and has an internal temperature of 145ºF. Cooking time may vary depending on portion sizes. Season to taste with salt and pepper as needed.
  6. Chef's Note: Serve with tartar sauce or wedges of lemon if desired.
