Oven Fried Herbed Fish and Chips

Ingredients
- 2 lb Atlantic cod, cut diagonally into 2 inch thick pieces
- 1/2 cup All purpose flour, or as needed for dredging only
- 3 Large eggs, or as needed for coating fish
- 1 cup Kettle cooked original potato chips, crushed into fine crumbs for measuring
- 2 tbsp Zesty Romano herb spice blend
Instructions
- Preheat oven to 375ºF. Line a rimmed baking sheet with foil and set aside.
- Gently rinse fish under cool water and pat dry with paper towels. Set aside.
- Set up a breading station with 3 shallow bowls. Add flour to the first, beat eggs in the second, and mix crushed potato chips and seasoning in the third.
- Thoroughly coat fish with flour, then egg, then seasoned crumbs. Arrange in a single layer on prepared baking sheet.
- Bake for 15 to 18 minutes, or until fish is cooked to a golden brown on the outside and has an internal temperature of 145ºF. Cooking time may vary depending on portion sizes. Season to taste with salt and pepper as needed.
- Chef's Note: Serve with tartar sauce or wedges of lemon if desired.
