Oven Baked Beef Taquitos

Serves 6
Ingredients
- 1/4 cup Medium salsa
- 1 tsp Chili powder
- 1/2 lb 93% lean ground beef
- 15 oz No salt added black beans
- 18 Yellow corn tortillas
- 1/2 cup Fresh green onion(s), chopped
- 1 tsp Garlic powder
- 1 cup Reduced fat shredded Mexican style cheese
Instructions
- Preheat oven to 400°F and line a sheet pan with foil. Set aside.
- Heat a large non-stick skillet over medium-high. Add ground beef, garlic powder and chili powder. Cook several minutes, breaking apart beef as it cooks.
- Once beef is cooked add salsa, black beans with liquid and green onions. Continue to cook until liquid is gone.
- While liquid in pan is reducing, wrap tortillas in a damp paper towel and place in microwave for 30 seconds.
- Place about a half tablespoon of cheese in the tortilla and add 2 scoops of filling. Roll the tortilla and place on foil lined sheet pan seam side down. Repeat until all taquitos are rolled.
- Lightly spray nonstick spray over taquitos and bake 15 minutes or until edges begin to brown.
- Cool before serving.
