Orzo With Red Peppers And Scallions

Ingredients
- 1 cup Orzo pasta
- 2 tbsp Unsalted butter
- 1 Red bell pepper, cored, seeded and diced into 1/4-inch cubes
- 4 Green onions, chopped
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
Instructions
- Bring 2 quarts water to a boil in a 3-quart pot.
- Add orzo to boiling water and cook 3 minutes. Drain pasta and set aside.
- Melt butter in a large skillet over medium heat.
- Sauté bell pepper and green onion 3 minutes.
- Add orzo to pepper and onions in skillet and toss to blend.
- Season with salt and pepper.
