Orzo With Red Peppers And Scallions

Ingredients

  • 1 cup Orzo pasta
  • 2 tbsp Unsalted butter
  • 1 Red bell pepper, cored, seeded and diced into 1/4-inch cubes
  • 4 Green onions, chopped
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. Bring 2 quarts water to a boil in a 3-quart pot.
  2. Add orzo to boiling water and cook 3 minutes. Drain pasta and set aside.
  3. Melt butter in a large skillet over medium heat.
  4. Sauté bell pepper and green onion 3 minutes.
  5. Add orzo to pepper and onions in skillet and toss to blend.
  6. Season with salt and pepper.
