Orecchiette with Bacon and Tomato Sauce

Serves 4
Ingredients
- 1 lb Orecchiette pasta
- 4 slices Bacon, cut into 1/2-inch pieces
- 1 tbsp Extra virgin olive oil
- 1 Medium red onion, thin sliced
- 2 Fresh garlic cloves, minced
- 24 oz Marinara sauce
- 1/8 tsp Salt
- 1/8 tsp Ground black pepper
Instructions
- Cook bacon in olive oil over medium-high heat until browned and almost crisp.
- Add onion to bacon and cook until soft, about 4 minutes.
- Add minced garlic and stir until mixture is fragrant, about 1 minute.
- Stir in Orti Di Calabria Sauce, salt and pepper. Bring sauce to a boil, then simmer about 15 minutes until cooked and slightly reduced.
- In a separate pot, cook pasta in salted water then drain but reserve 1 cup of cooking water for later use.
- Pour the sauce and the cooking water over the pasta in a pot and return to stove top. Cook over medium-high heat until sauce thickens and is coating pasta, about 2 minutes.
- Chef's note: Serve with grated Parmesan and chopped parsley.
