Orange Ginger Roasted Carrots

Ingredients

  • 16 oz Carrot
  • 2 tbsp Olive oil
  • 1 tbsp Brown sugar
  • 1 tsp Fresh ginger root, grated
  • 1/4 cup Spiced Orange Apple Cider
  • 1/4 tsp Kosher salt

Instructions

  1. Preheat oven to 400˚F. Place a 9x13 baking dish in oven.
  2. Cut carrots in half and toss together with olive oil, ginger, cider and sugar.
  3. Once both oven and baking dish have come up to temperature, remove dish and add carrots followed by cider mixture.
  4. Season with salt, then place in oven for 30 minutes or until carrots are browned along edges and most of the liquid has evaporated.
  5. Serve immediately.
