Ingredients
- 4 Wheat English muffins, toasted
- 1/2 cup Avocado, mashed
- 12 oz Cooked or canned salmon
- 1 Tomato
- 1/2 Red onion, thin sliced
- 4 tsp Roasted pepitas
- 1 Fresh lemons, juiced
Instructions
- To build stackers, spread a thin layer of avocado over all the muffins.
- Top with a layer of salmon, about 1.5 oz. per muffin.
- Next top with a slice of tomato, followed by red onion.
- Finally top with roasted pepitas for crunch and a squeeze of lemon juice.
