Ingredients

  • 4 Wheat English muffins, toasted
  • 1/2 cup Avocado, mashed
  • 12 oz Cooked or canned salmon
  • 1 Tomato
  • 1/2 Red onion, thin sliced
  • 4 tsp Roasted pepitas
  • 1 Fresh lemons, juiced

Instructions

  1. To build stackers, spread a thin layer of avocado over all the muffins.
  2. Top with a layer of salmon, about 1.5 oz. per muffin.
  3. Next top with a slice of tomato, followed by red onion.
  4. Finally top with roasted pepitas for crunch and a squeeze of lemon juice.
