One Pot Spicy Meatballs Pasta

Serves 6
Ingredients
- 1/4 cup Extra Virgin Olive Oil
- 12 Raw pork Meatballs - Spicy Italian-Style
- 1 cup White onion, sliced
- 1 pt Cherry tomatoes
- 2 tbsp Fresh garlic cloves, minced
- 32 oz Beef broth
- 5 oz Fresh baby spinach
- 1/2 cup Heavy whipping cream
- 1 lb Gemelli or Casarecce pasta, dry
- 1 cup Parmesan Grated Cheese
Instructions
- Place oil in a large oven safe pot over medium-high heat. Add meatballs and cook several minutes until well browned on all sides.
- Add onions, tomatoes, and garlic. Continue to cook until onions are translucent and tomatoes begin to wrinkle.
- Stir in broth, spinach, cream and pasta until combined. Bring to a simmer then reduce to medium heat, cover and cook until pasta is tender.
- Once pasta is cooked to desired doneness, remove from heat, add Parmesan cheese and stir until melted. Serve.
