One Pot Creamy Mushroom Risotto

Ingredients

  • 1/4 cup Unsalted butter
  • 3/4 cup White onion, sliced
  • 1 cup Long grain rice
  • 2 cups Chicken broth
  • 1/2 cup Button mushrooms, diced
  • 1 tsp Dried sage, minced
  • 1/3 cup Chardonnay
  • 1 cup Shredded parmesan cheese, grated, divided use
  • 1/4 cup Fresh Italian parsley, roughly chopped
  • 1 Instant Pot Duo

Instructions

  1. Spray rice cooker liberally with olive oil spray, add butter, onions, rice, chicken broth, mushrooms, sage, wine and half parmesan cheese into rice cooker.
  2. Cover and cook until rice cooker bell chimes or turns itself off.
  3. Stir in remaining Parmesan cheese and season to taste. Garnish with parsley.
