One Pot Creamy Mushroom Risotto

Ingredients
- 1/4 cup Unsalted butter
- 3/4 cup White onion, sliced
- 1 cup Long grain rice
- 2 cups Chicken broth
- 1/2 cup Button mushrooms, diced
- 1 tsp Dried sage, minced
- 1/3 cup Chardonnay
- 1 cup Shredded parmesan cheese, grated, divided use
- 1/4 cup Fresh Italian parsley, roughly chopped
- 1 Instant Pot Duo
Instructions
- Spray rice cooker liberally with olive oil spray, add butter, onions, rice, chicken broth, mushrooms, sage, wine and half parmesan cheese into rice cooker.
- Cover and cook until rice cooker bell chimes or turns itself off.
- Stir in remaining Parmesan cheese and season to taste. Garnish with parsley.
