Unsaved One-Pan Tri-Tip Beef with Sweet Potato Fries & Asparagus

Ingredients

  • 2 lb Tri-Tip Roast
  • 1/4 cup Olive oil, divided use
  • 10 oz Bag Sweet Potato Crinkle Cut Fries
  • 6 oz Bag Asparagus Tips

Instructions

  1. Preheat oven to 400°F.
  2. Rub roast with 1 teaspoon olive oil, salt and pepper. Place on a sheet pan and bake 10 minutes.
  3. Meanwhile, toss sweet potato fries and asparagus with remaining olive oil, salt and pepper.
  4. Remove tri-tip from oven and add sweet potato fries and asparagus. Avoid overcrowding the pan.
  5. Bake 20 more minutes or until tri-tip's internal temperature reaches 145°F and veggies are tender.
