One Pan Roasted Pork with Carrots and Apples

Ingredients
- 1/4 cup Yellow mustard
- 1/4 cup Extra virgin olive oil, plus as needed for drizzling
- 2 tsp Kosher salt
- 1/2 tsp Ground black pepper
- 2 Fresh rosemary
- 2 Garlic cloves, minced
- 1/4 cup Honey
- 1 1/2 lb Pork tenderloin
- 8 Carrots, peeled
- 1 Large Granny Smith apple, cut into wedges
- 1 Large Golden Delicious apple, cut into wedges
Instructions
- Preheat oven to 400°F.
- Place mustard, olive oil, salt, black pepper, rosemary, garlic and honey in a bowl and add pork. Coat pork completely and marinate about an hour.
- Place carrots, apples and seasoned tenderloin on foil/parchment paper lined baking sheet. Lay rosemary sprigs over pork.
- Drizzle olive oil evenly over carrots and apples and season with salt and pepper to taste.
- Bake 30 minutes or until carrots and apples are browned and soft, and pork has an internal temperature of 145°F.
- Allow pork to rest a few minutes before serving.
