Unsaved One Pan Grilled Scallion Mustard Roasted Salmon with Asparagus

Ingredients

  • 1 lb Fresh Atlantic Salmon Fillet, cut into 4 equal portions
  • 1 lb Fresh asparagus, wooded ends removed
  • 2 Quick Heat White & Red Quinoa, prepared according to package directions
  • 4 tbsp Mustard
  • 1 Medium grapefruit, zested
  • 2 tbsp Grated Parmesan Cheese, grated

Instructions

  1. Preheat oven to 425°F.
  2. Line a sheet pan with foil or parchment.
  3. Place salmon fillets and asparagus on sheet pan.
  4. Evenly distribute Mustard and zest over fillets and asparagus. Gently turn asparagus to coat.
  5. Roast salmon and asparagus 10 minutes. Remove pan, sprinkle Parmesan cheese over asparagus and return to oven 5 additional minutes.
  6. Serve with grains.
