One Pan Chicken and Spinach Sauté

Unsaved One Pan Chicken and Spinach Sauté

Ingredients

  • 1 tbsp Bolners Fiesta Salt Free Fajita Seasoning
  • 1 cup Yellow onions, sliced
  • 1/2 cup Martini & Rossi Dry Vermouth
  • 1 tbsp Fresh garlic clove(s), minced
  • 1 cup Central Market Bulgar & Red Quinoa Quick Cook Grains, prepared according to package directions
  • 4 cups H-E-B Baby Spinach
  • 10 oz H-E-B Natural Boneless, Skinless Chicken Breasts, cut into 1 inch chunks

Instructions

  1. Sprinkle chicken on both sides with seasoning.
  2. Heat a large non-stick skillet over medium high heat.
  3. Lightly spray with non-stick spray and add the chicken.
  4. Cook chicken for several minutes, toss frequently until well browned.
  5. Add in onions, and garlic. Continue to cook until onions are tender, then add in the vermouth.
  6. Bring to a low simmer and let the liquid reduce by half. Then add in spinach.
  7. Remove pan from heat and toss until spinach is wilted.
  8. Heat grains according to package directions.
  9. Divide them evenly among two bowls then top with spinach chicken mixture.
  10. Serve immediately.
