Olive Oil Poached Egg on Pecorino Toast

Ingredients
- 1 cup Extra Virgin Olive Oil, approximate measurement for poaching
- 2 Small fresh Rosemary
- 4 Ciabatta Bread, sliced
- 1/2 cup Pecorino cheese, shredded
- 4 Large eggs
Instructions
- Pour enough olive oil in the bottom of a small skillet to reach about 1/2 inch depth. Add rosemary to oil. Heat over medium low heat until thermometer reads 155ºF.
- While oil is heating, spoon a little of the oil over each slice of bread. Top generously with pecorino cheese. Place toast in air fryer on toasting rack and cook on toast setting, or 390ºF for 4 minutes if using a manual setting.
- Meanwhile, remove herbs and add eggs, one at a time to oil. Poach for 2 to 3 minutes, or until egg white is set and yolks are still soft.
- Remove toast from air fryer and top each with an egg. Drizzle a scant amount of hot oil over the top, and finish with salt and cracked black pepper to taste.
