Serves 6
Ingredients
- 1 lb Boneless Chicken Breast Tenders, cut into 1 inch cubes
- 14.5 oz Diced Tomatoes, Mexican Flavor
- 10 oz Vegetable medley, cut in bite size pieces
- 1 cup Long Grain Brown Rice
- 2 tbsp Ole Seasoning
- 1 cup Green onion, chopped
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
Instructions
- In a medium stockpot, heat 8 cups of water over medium high heat.
- Stir in chicken, tomatoes, vegetables, rice and seasoning. Bring to a boil.
- Reduce heat to medium, cover, and simmer 35 - 45 minutes.
- Ladle soup into individual bowls, and top with green onion. Season with salt and pepper.
