Olé Soup

Serves 6

Ingredients

  • 1 lb Boneless Chicken Breast Tenders, cut into 1 inch cubes
  • 14.5 oz Diced Tomatoes, Mexican Flavor
  • 10 oz Vegetable medley, cut in bite size pieces
  • 1 cup Long Grain Brown Rice
  • 2 tbsp Ole Seasoning
  • 1 cup Green onion, chopped
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. In a medium stockpot, heat 8 cups of water over medium high heat.
  2. Stir in chicken, tomatoes, vegetables, rice and seasoning. Bring to a boil.
  3. Reduce heat to medium, cover, and simmer 35 - 45 minutes.
  4. Ladle soup into individual bowls, and top with green onion. Season with salt and pepper.
