Old Fashioned Texas Tomato Pie

Ingredients
- 2 Refrigerated pie crust
- 1/2 cup Japanese style panko plain bread crumbs
- 4 Large greenhouse tomatoes, ends and stem removed, sliced 1/4 inch thick
- 1 tsp Kosher salt
- 1 tsp Ground black pepper
- 1 cup Crumbled feta cheese
- 1 1/2 cups Shredded cheddar, Gruyère & asiago cheese mix
- 1/2 cup Shredded Parmesan cheese
- 1 Large eggs, beaten well with 1 tsp water
Instructions
- Preheat oven to 375ºF. Spray a 9 inch pie pan with non-stick spray. Fit one pie crust in the bottom of the pie pan then sprinkle panko bread crumbs over the crust.
- Layer 4 to 5 tomato slices over panko to cover the bottom. Sprinkle with 1/3 of salt and pepper then top with 1/3 cup of feta, 1/2 cup of cheddar Gruyère mix, and 1/3 of Parmesan cheese. Repeat layering process one more time.
- Add a third and final layer of tomatoes, season with salt and pepper then top with remaining cheese.
- Top with second pie crust, pinch edges closed, and cut 4 slits in crust. Brush with egg mixture and bake 45 to 50 minutes, or until top is browned. Rest 10 minutes before serving.
