Unsaved Old Fashioned Sweet Potato Casserole

Ingredients

  • 58 oz Sweet potatoes in light syrup, drained
  • 1/4 cup Brown sugar
  • 1 tsp Ground cinnamon
  • 1/2 tsp Vanilla extract
  • 1/4 cup Maple Syrup
  • 2 tsp Sea Salt
  • 1/2 tsp Ground black pepper, ground
  • 2 Large eggs, beaten
  • 1/2 cup Heavy whipping cream
  • 3 tbsp Salted butter, melted
  • 3 cups Miniature marshmallows

Instructions

  1. Preheat oven to 350°F. In a large bowl place drained sweet potatoes, brown sugar, cinnamon, vanilla, maple syrup, salt and pepper.
  2. Using a potato masher or heavy whisk mash the sweet potato mixture until ingredients are thoroughly combined and only small chinks of sweet potato remain.
  3. Add eggs, heavy cream and melted butter. Whisk well to combine then spread sweet potato mixture into an 8 X 8-inch pan and gently tap to level and remove air bubbles.
  4. Place in oven and cook for 40 minutes. Remove and place mini marshmallows on top and return to oven for 5 to 6 minutes until just browned on top. Let rest 10 minutes prior to serving.
