Okra and Tomatoes

Serves 6

Ingredients

  • 2 Thick cut bacon
  • 1 lb Fresh okra, washed and sliced
  • 1 White onion, chopped
  • 1/2 Green bell pepper, chopped
  • 2 Ribs of celery, chopped
  • 2 Roma tomato, diced
  • 8 oz Tomato sauce
  • 1/4 tsp Kosher salt
  • 1/4 tsp Ground black pepper

Instructions

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. (Reserve half the bacon fat in the pan and pour off the rest).
  2. In same pan, saute okra, onion, bell pepper, and celery until tender. Add tomatoes, tomato sauce, salt and pepper; cook until hot and flavors are well blended.
  3. Garnish with crumbled bacon, if desired.
