Not Your Mama's Meatloaf

Serves 4

Ingredients

  • 1/2 cup Roasted Pineapple Habanero Sauce, divided use
  • 1/2 cup Crushed tortilla chips, (the crumbs at the bottom of the bag are perfect for this)
  • 1 Large egg
  • 2 lb Ground beef
  • 1 tbsp Texas Prime Coarse Seasoning
  • 1/4 cup Green onions, finely chopped

Instructions

  1. Preheat oven to 375ºF.
  2. Mix ground beef with seasoning, egg, tortilla chip crumbs, onions and 1/4 cup of the pineapple habanero sauce.
  3. Press gently into 4 mini loaf pans. Place on a baking sheet. Top it with the remaining sauce.
  4. Bake 20 to 25 minutes or until internal temperature is 160ºF.
  5. Chef's note: This can also be done in a single loaf pan. Adjust baking time to 35 to 40 minutes.
