New England Style Clam "Bake"

Serves 6
Ingredients
- 1 Medium Fresh yellow onion(s), quartered
- 6 Garlic cloves, smashed, divided use
- 2 cups Dry white wine, like Vinho Verde
- 1 Bay leaf, fresh works great
- 3 Fresh lemon(s), 2 halved, 1 juiced, divided use
- 1 1/2 lb Baby red potato(es)
- 1 tbsp Kosher salt
- 4 Sweet corn on the cob, cut in half
- 1 lb Smoked sausage, cut into large chunks
- 3 Raw lobster tails, 3 5 oz. ea.
- 1/2 lb Fresh raw colossal gulf shrimp
- 1 lb Littleneck clams, or mussels, beards removed
- 4 oz Salted butter, melted
- 0.2 oz Fresh tarragon, or thyme, chopped
Instructions
- In a large Dutch oven or pot, add onions, 4 cloves of garlic, wine, bay leaf, 2 halved lemons, and 2 cups water. Bring to a boil.
- Add in potatoes and salt, reduce heat to a simmer, cover and cook for 20 minutes.
- Add corn, smoked sausage, lobster tails, shrimp, and clams. Cover and cook an additional 15 to 20 minutes (until clams are fully opened up).
- Meanwhile, add butter and remaining garlic to a small saucepan. Bring to a low simmer and add in fresh chopped tarragon or thyme.
- Spoon seafood onto a large platter, discarding any unopened clams. Drizzle with steaming liquid, melted butter and lemon juice.
