Unsaved New England Style Clam "Bake"

Ingredients

  • 1 Medium Fresh yellow onion(s), quartered
  • 6 Garlic cloves, smashed, divided use
  • 2 cups Dry white wine, like Vinho Verde
  • 1 Bay leaf, fresh works great
  • 3 Fresh lemon(s), 2 halved, 1 juiced, divided use
  • 1 1/2 lb Baby red potato(es)
  • 1 tbsp Kosher salt
  • 4 Sweet corn on the cob, cut in half
  • 1 lb Smoked sausage, cut into large chunks
  • 3 Raw lobster tails, 3 5 oz. ea.
  • 1/2 lb Fresh raw colossal gulf shrimp
  • 1 lb Littleneck clams, or mussels, beards removed
  • 4 oz Salted butter, melted
  • 0.2 oz Fresh tarragon, or thyme, chopped

Instructions

  1. In a large Dutch oven or pot, add onions, 4 cloves of garlic, wine, bay leaf, 2 halved lemons, and 2 cups water. Bring to a boil.
  2. Add in potatoes and salt, reduce heat to a simmer, cover and cook for 20 minutes.
  3. Add corn, smoked sausage, lobster tails, shrimp, and clams. Cover and cook an additional 15 to 20 minutes (until clams are fully opened up).
  4. Meanwhile, add butter and remaining garlic to a small saucepan. Bring to a low simmer and add in fresh chopped tarragon or thyme.
  5. Spoon seafood onto a large platter, discarding any unopened clams. Drizzle with steaming liquid, melted butter and lemon juice.
