New American Classic Burger with Bacon Aioli

Ingredients

  • 1 lb Uncured black pepper bacon, cut into thin strips
  • 2 Large eggs, yolks only
  • 1/4 cup Apple cider vinegar
  • 3 Garlic clove, minced
  • 1 tbsp Dijon mustard
  • 3/4 cup Extra virgin olive oil
  • 1 lb 90% lean ground pork
  • 1 lb Ground beef
  • 1 lb 90% lean angus ground beef sirloin
  • 1 tbsp Kosher salt, divided use for all patties
  • 1 tbsp Ground black pepper, divided use for all patties
  • 8 Hamburger buns

Instructions

  1. In a sauté pan over medium heat, fry bacon until crispy (about 8 - 10 minutes). Drain bacon pieces on a paper towel and cool. (Discard or save bacon grease for another use).
  2. In a food processor, add bacon, egg yolks, vinegar, garlic and mustard. Purée ingredients and slowly add olive oil until emulsified and liquid is thick like a mayonnaise.
  3. Season aioli to taste with salt and pepper. Transfer to a container and refrigerate until ready to use. Aioli can be made up to a week in advance.
  4. Preheat grill to 350 - 375ºF, or a cast iron skillet over medium-high heat.
  5. In a stainless steel bowl, combine ground pork, brisket and beef. Mix gently and thoroughly by hand. Form burgers into 6 - 8 oz. patties and set on a sheet pan lined with parchment paper.
  6. Season all patties liberally on both sides with salt and pepper. For even cooking, allow to come to room temperature (about 20 - 25 minutes).
  7. Place burgers on grill or in pan and cook until internal temperature reaches 155ºF (about 6 - 8 minutes per side). Allow burgers to rest 15 minutes.
  8. Serve burger on a toasted bun with bacon aioli. Pile high with your favorite burger condiments like lettuce and tomato.
