Unsaved Mussels alla Napoletano (Naples Style Mussels)

Ingredients

  • 1/3 cup Shallot(s), finely chopped
  • 3 Large fresh basil, freshly torn
  • 2 pt Cherry tomatoes, halved
  • 1/2 cup Dry white wine, such as Pinot Grigio or Sauvignon Blanc
  • 3 oz Boar's Head Grated Pecorino Romano All Natural Cheese
  • 3 tbsp Italian Extra Virgin Olive Oil
  • 1 1/2 lb Fresh mussels
  • 8 oz Central Market Mafaldine IGP Pasta di Gragnano
  • 1 tsp Kosher Salt
  • 1 tsp Fresh garlic cloves, finely crushed
  • 2 tbsp Salted butter

Instructions

  1. Rinse mussels under cool, clear running water. Discard any that do not close completely when rinsed.
  2. Bring a large pot of water to a boil. Cook pasta according to package directions. Drain pasta, reserving 1/2 cup cooking water. Transfer to a large serving bowl. Drizzle with reserved water and cover to keep warm.
  3. Meanwhile, heat oil in a large skillet over medium-high heat. Add shallots and garlic, stir and cook to soften about 1 minute.
  4. Add tomatoes and cook another 2 to 3 minutes to soften tomatoes. Add wine, butter and mussels. Turn heat down to medium.
  5. Stir and cover tightly with a lid. Allow mussels to cook 5 to 6 minutes, or until mussels open up. Discard any that do not open during cooking.
  6. Add pasta to cooked mussels and stir to coat with pan sauces. Divide among serving bowls.
