Unsaved Mushroom Veggie Stacks

Ingredients

  • 1 tbsp Canola oil no-stick cooking spray, about a 10 second spray
  • 6 Portabella mushrooms, stems removed
  • 1 Medium zucchini squash, sliced lengthwise 1/4-inch thick
  • 1 Medium red onion, cut into 1/2-inch slices
  • 1 Red bell pepper, cored, seeded and cut into 3 pieces
  • 3 Fresh garlic cloves, peeled and chopped
  • 6 Fresh basil
  • 1 cup Fat free mozzarella cheese, shredded

Instructions

  1. Heat the oven to 450°F.
  2. Line a large baking sheet with foil and spray with non-stick cooking spray.
  3. Arrange the mushrooms, zucchini, red onion and bell pepper on the baking sheet and lightly spray each side with non-stick cooking spray.
  4. Season the vegetables with chopped garlic.
  5. Bake the vegetables on the center oven rack for 15 to 25 minutes or until browned.
  6. Remove the baking sheet from the oven.
  7. Place a mushroom on the bottom with the gill side up and layer mushroom with a slice of zucchini, red onion, red pepper, 2 basil leaves, 1/3 cup mozzarella cheese and mushroom gill side down.
  8. Place these stacks back on baking sheet and bake in the oven 5 more to melt cheese.
