Unsaved Mushroom Caprese Salad

Ingredients

  • 1 pt Sweet Tomatoes, cut in half lengthwise
  • 8 oz Fresh Mozzarella cheese, drained of excess moisture
  • 5 oz Salad Topper Mushrooms
  • 1/4 cup Balsamic Vinaigrette Salad Dressing
  • 5 oz Baby Arugula
  • 3 tbsp Fresh basil, about 5 or 6 large leaves, sliced into very thin shreds

Instructions

  1. Place tomatoes, mozzarella pearls, and mushrooms in a large salad bowl. Drizzle with vinaigrette and let sit for a few minutes to allow flavors to blend together.
  2. Just before serving, add arugula to bowl and toss gently to combine. Divide salad among serving plates, top with fresh basil, and serve.
