Mushroom and Onion Smothered Pork Chops

Serves 4
Ingredients
- 1 tbsp Olive oil
- 1 cup Yellow onions, sliced
- 1 cup Fresh mushrooms, sliced
- 1 lb Pork chops, thin sliced
- 2 cups Beef broth
Instructions
- Place large sauté pan over medium-high heat and add oil.
- Brown onions and mushrooms 2 to 3 minutes or until they start to brown.
- Push onions to the side of the pan and add pork chops to pan.
- Sprinkle chops with salt and pepper and cook 2 minutes per side.
- Cover pork chops with onions after flipping.
- Reduce heat to medium and add broth.
- Cook 25 minutes or until chops are tender.
- Serve pork chops over egg noodles and garnish with green onion.
- Chef's Note: If desired, thicken sauce with a cornstarch slurry, 1/3 cup water and 1 tablespoon of cornstarch. Constantly stir and remove from heat after 1 minute.
