Morning Sunrise Muffins

Ingredients

  • 2 cups All purpose flour
  • 1/2 cup Old fashioned rolled oats
  • 2 tsp Apple pie spice
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Fine sea salt, if using iodized table salt use 1/2 tsp.
  • 3 Large eggs
  • 1/2 cup Coconut oil, or any neutral flavored vegetable oil
  • 8 oz Canned crushed pineapple, with juice
  • 1 cup Fresh grated apple, Sweeter apples like Gala or honey crisp varieties
  • 2 cups Fresh shredded carrots
  • 1/2 cup Unsweetened shredded coconut
  • 1/2 cup Dark brown sugar
  • 1/3 cup Roasted salted sunflower seeds
  • 1 tbsp Vanilla extract
  • 1/2 tsp Almond extract

Instructions

  1. Preheat oven to 400ºF. In a medium-sized bowl combine flour, oats, apple pie spice, baking powder, baking soda and salt. Whisk to combine.
  2. In a separate bowl combine eggs, oil, pineapple, apple, carrots, shredded coconut, brown sugar, sunflower seeds, vanilla and almond extracts. Whisk to combine.
  3. Add dry ingredients to wet and use a spatula to gently mix until batter comes together and flour is completely absorbed.
  4. Spray a standard muffin tin liberally with non-stick spray. Scoop batter into each muffin cup and fill to the top. *Makes approximately 12 standard muffins.
  5. Place muffin pan on a sheet pan and bake 18 to 20 minutes or until a toothpick inserted into each muffin pulls out clean.
  6. Place muffin pan on an elevated rack to cool. Gently remove muffins from pan and serve.
  7. Chef's Note: Muffins will keep up to 3 days in a sealed container on the counter or up to 5 days refrigerated.
