Monterey Jack Spinach Mushroom Scramble

Ingredients

  • 2 tsp Canola oil
  • 2 tsp Red onions, chopped
  • 1 cup Mushrooms, thin sliced
  • 1 cup Baby Spinach, thin sliced
  • 1/8 tsp Crushed red pepper flakes
  • 1/2 cup Liquid eggs
  • 1/4 cup Reduced Fat Shredded Monterey Jack Cheese

Instructions

  1. Heat heavy bottom skillet over medium heat for 2 minutes.
  2. Add canola oil, red onion, and mushrooms.
  3. Stir fry 3 minutes or until mushrooms are tender.
  4. Add spinach leaves and crushed red pepper and stir fry for 2 minutes.
  5. Add H-E-B Real Egg and cook until egg is at desired doneness.
  6. Top with cheese.
