Mongolian Beef & Broccoli with Rice

Serves 6
Ingredients
- 1/4 cup Less sodium soy sauce
- 1 lb Beef stir-fry, cut in 1/4 thick bite size pieces
- 1/4 cup Brown sugar
- 2 tsp Garlic cloves, minced
- 14 oz Boil in Bag brown rice
- 1/4 cup Corn starch
- 15 oz Frozen Broccoli cuts
- 1 tsp Fresh ginger root, minced
- 1 tbsp Canola oil
Instructions
- Dip beef in cornstarch, lightly coating each piece. Let rest about 8 minutes to allow cornstarch to stick.
- Meanwhile, prepare brown rice according to package instructions. Set aside.
- Make stir-fry sauce: In a medium saucepan over medium/low heat, add ginger, garlic, soy sauce, brown sugar and 1 cup water. Raise heat to medium and boil 3 minutes or until sauce thickens. Remove from heat.
- In a skillet or wok, heat oil over medium heat until hot, but not smoking. Add beef and sauté 5 minutes. Add broccoli and continue to cook 5 minutes or until broccoli is tender. Add sauce to broccoli and beef; cook 2 minutes, while stirring.
- Spread cooked rice on a platter and top with beef and broccoli.
