Mom's Meat Loaf

Ingredients
- 1 cup Croutons
- 2 lb 73% lean ground beef
- 2 Large eggs
- 1/4 cup Fresh cilantro, chopped
- 1/2 cup Frozen fajita vegetables blend, chopped
- 2 tbsp Canola oil
- 2 tsp Beef fajita spice blend
- 1/2 cup Ketchup
Instructions
- Heat oven to 400°F.
- Spray a 1 1/2-quart loaf pan with nonstick cooking spray and set aside.
- Place croutons in food processor, process to coarse crumbs, and set aside.
- Heat a large skillet on high heat for 2 minutes.
- Add canola oil and chopped vegetables and stir-fry until crisp brown on edges (about 3 minutes). Remove from heat.
- Quickly combine crushed croutons, fried vegetable mixture, ground beef, fajita seasoning, cilantro, and eggs in a bowl.
- Press the mixture into prepared loaf pan.
- Bake for 45 minutes or until a quick-response thermometer reads 160°F.
- Pour off excess fat and cool for 10 minutes.
- Top meat loaf with ketchup and enjoy a great meal.
