Mom's Meat Loaf

Unsaved Mom's Meat Loaf

Ingredients

  • 1 cup Croutons
  • 2 lb 73% lean ground beef
  • 2 Large eggs
  • 1/4 cup Fresh cilantro, chopped
  • 1/2 cup Frozen fajita vegetables blend, chopped
  • 2 tbsp Canola oil
  • 2 tsp Beef fajita spice blend
  • 1/2 cup Ketchup

Instructions

  1. Heat oven to 400°F.
  2. Spray a 1 1/2-quart loaf pan with nonstick cooking spray and set aside.
  3. Place croutons in food processor, process to coarse crumbs, and set aside.
  4. Heat a large skillet on high heat for 2 minutes.
  5. Add canola oil and chopped vegetables and stir-fry until crisp brown on edges (about 3 minutes). Remove from heat.
  6. Quickly combine crushed croutons, fried vegetable mixture, ground beef, fajita seasoning, cilantro, and eggs in a bowl.
  7. Press the mixture into prepared loaf pan.
  8. Bake for 45 minutes or until a quick-response thermometer reads 160°F.
  9. Pour off excess fat and cool for 10 minutes.
  10. Top meat loaf with ketchup and enjoy a great meal.
