Mole Verde Baby Back Ribs

Ingredients

  • 8 oz Mole verde
  • 1 Baby back pork ribs

Instructions

  1. Heat grill to 425ºF. Add two pieces of post oak wood and allow the flame to completely die down.
  2. Season ribs with salt and pepper and place them on the grill over indirect heat away from the coals. Cook for 30 minutes before flipping.
  3. Once flipped, spoon or brush mole verde over the ribs. Cook for an additional 40 minutes then flip again and add more mole.
  4. Cook an additional 60 minutes, flipping every 20 minutes and brushing more sauce each time.
  5. After 60 minutes, remove from grill and wrap tightly in butcher paper. Rest for 30 minutes before serving.
